15-Bean Soup
1 package
(1 pound) bean soup mix (discard flavor packet) or mix dry beans
of your choice to equal 1 pound
1 large onion, chopped
1 teaspoon minced garlic
1 teaspoon celery salt
2 stalks celery, chopped
1 bay leaf
1 dash cayenne pepper
1 pound kielbasa sausage, sliced in chunks
Soak
beans overnight. The next morning, drain beans. Place beans in crockpot
and add enough water to cover the top of the beans. Add all other
ingredients except sausage. Cover and cook on high for two hours;
then cook 6 to 7 hours on low.
An hour
before serving, check texture of soup. If too thin, mash some of
the beans. Add sliced sausage and cook another hour and serve. |
