Easy Enchilada Pie
10 corn tortillas, quartered
2 pounds lean ground beef
1 4-ounce can diced green chilies
1 can mushroom soup
1 16-ounce can stewed tomatoes
1 pound grated Longhorn cheese
1 medium onion, chopped
Cook ground beef and onion in skillet, drain.
Add chilies, soup, and tomatoes to beef mixture. Layer in 9-by-13-inch
pan, half each of tortillas, beef mixture and cheese. Repeat layers
topping with cheese. Cover and bake at 350 degrees for 1 hour.
