Easy Chocolate-Covered Cherries
2 jars (10-ounces each) maraschino cherries with stems
1 package (12-ounces) semi-sweet chocolate chips
Drain cherries well and discard juice. Place cherries
on paper towels and allow to dry completely. Place chocolate chips
in a medium saucepan with a heavy bottom. Heat over low heat, stirring
constantly until chocolate is melted. Remove from heat.
Dip cherries into melted chocolate, swirling to
coat completely. Place cherries on a baking sheet lined with waxed
paper; refrigerate until set. Makes about 5 dozen.
NOTE: For more decorative treats, use white chocolate
to coat cherries; then drizzle with melted dark chocolate next and
allow to set.
