Fresh Apple Coffee
1/2 cup margarine
1 cup sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
2 cups fresh apple, peeled and finely chopped
1/2 cup chopped nuts
1/2 cup brown sugar, firmly packed
1 teaspoon cinnamon
2 tablespoons flour
In a mixing bowl, cream
together the margarine and sugar. Add the eggs and vanilla; beat
well. Sift together 2 cups flour, baking powder, baking soda and
salt. Add to the creamed mixture alternately with sour cream.
Fold in the chopped apple and spread the batter into a greased 13
x 9-inch pan. In a separate bowl combine nuts, brown sugar, cinnamon
and 2 tablespoons of flour. Mix well and sprinkle over the batter.
Bake at 350 degrees for 40 minutes.
